For me, the only major limitation of the ITX form factor is that it's (almost) universally limited to 2 sticks of RAM. I haven't felt the need for a decade to put anything in a PCIe slot other than a single GPU, but I often want to add more RAM before I'm done with a platform.

From a PCP search, there is only 1 mITX board that has serviceable CPU with 4 ram slots. It's an LGA 2011-3 socket (current gen). The other options with 4 ram slots all are SoC boards. Depending on what kinds of tasks you need to carry out, two RAM slots is usually enough as Mini ITX motherboards can accommodate up to 32GB of RAM total. itx is just not really used for high-performance workstation builds.
